White Christmas


A White Christmas is something that I dream about being able to experience one day. But for now, I will have to make do with our Aussie Summer Christmas, and some White Christmas for dessert!

I love making White Christmas. Not only is it a simple and easy recipe, but it looks beautiful  and tastes delicious.

This year I used the White Christmas recipe from Taste magazine, (taste.com.au) and I also added my own little variation in it. I plan to serve White Christmas this Christmas Eve, where I am aiming to have a traditional dessert table for my immediate family.
Another idea I love is to put a few White Christmas squares inside a jar and embellish with ribbon. Take a look at Sharnel's blog for more inspiration!

White Christmas
::Ingredients::
1 pack of marshmellows, chopped
1 pack of red glace cherries
1 pack of pistachios finely chopped
1/3 cup dessicated coconut
1 pack of nestle white melts
1 cup of rice bubbles
2 tablespoons of copha (use when melting the chocolate)

::Method::
1. Line a sqaure baking tin with baking paper & allow an overhang.
2.Combine marshmellows, cherries, nuts, coconut, rice bubbles in a bowl.
3. Melt the chocolate over a pan of simmering hot water, and add copha to help it thin out.
4. Pour the chocolate over the marshmellow mixtue & mix well with spoon.
5. Spoon it into prepared pan, press down with spatula. Refrigerate for 2hrs or overnight until set.
6. Use a warm knife to cut into small bite size sqaures.
*Store in an airtight container for up to 2 weeks*
